I am making use of the many leftovers from yesterday: fresh kraut, longaniza sausage, and a big crock of beans.
I have too many tomatoes that must be used so I must work it all together to not waste food.
Dinner tonight is as follows – Tomatoes reduced with fresh chilies. Sausage crumbled in to add flavor. Beans added at the end. All covered with fresh white unpasteurized farmer’s cheese. Then covered to bake while I shower.
Garnished with fresh kraut.
I suspect delicious.
